CANADIAN CHEESE SOUP
Ingredients:
2 large potatoes, peeled and diced
1 medium onion, finely diced
3/4 cup carrots, finely diced
3/4 cup celery, finely diced
2 cups water
32 oz chicken broth
18 oz Velveeta cheese
1 cup light cream
Salt and pepper to taste
1/8 cup chopped fresh parsley (or 2 tsp dried flakes)
6 oz Canadian bacon, diced
4 TBSP cornstarch
1/2 cup cold water
Directions:
ln a large pan, combine potatoes, onions, carrots, celery and 2 cups water.
Bring to a boil, cover and simmer on low heat for 15 minutes,
Add chicken broth, cheese, cream, salt, pepper, parsley and Canadian bacon.
Cook over low heat, stirring frequently, for 15 minutes.
Mix cornstarch and 1/2 cup cold water together.
Gradually add to soup while stirring to thicken.
Serve immediately.
Makes 8 servings.
